Pineapple Fried Rice

Pineapples are one of my preferred fruits. It’s incredibly juicy and has a vibrant tropical flavor. I love it because it can be used in both sweet and savory dishes. It is the most versatile fruit, in my opinion.

Pineapple Fried Rice is of Thai origin; there are various versions of Pineapple Fried Rice around. I love cooking the dishes from different countries, and this is one of my favorites as it is quick and easy to make.

For this recipe, jasmine rice is normally used. I’ve found that it doesn’t matter which rice you use; it is simply a matter of choice. You get the same results in the end. I used parboiled brown rice in my recipe since it is readily available in my region.

I do cook jasmine rice, and I love it for, if nothing, its aroma. You may want the smell of jasmine rice. If you decide to use jasmine rice, I have step by step instructions in the recipe notes.

However, when it comes to nutrition in jasmine rice vs. parboiled brown rice, parboiled brown rice might make a healthier option. According to the USDA, you will get the same energy from a 1/4 cup of either rice. They also contain similar amounts of protein and carbohydrate. However, parboiled brown rice contains minerals such as fiber, iron, zinc, magnesium, copper, and Niacin, while Jasmine rice has no minerals.

Let’s talk about the flavor.

To make pineapple fried rice, you need to have the right type of sauces to get that authentic Thai flavor that you certainly want for this recipe.

Oyster sauce will give you the most authentic Thai, flavor.

Soy sauce will enhance the flavor giving you both a home style and restaurant-style cooking. 

Maggi seasoning is what is commonly used in the Caribbean. It is also used in a lot of restaurants and homes.

These flavors will undoubtedly enhance the taste of your pineapple fried rice.

 

If you want to know what Maggi seasonings look like, you can pick it up on Amazon for between $10-$15. It has a long shelf life. I used the powder form, but you can use the same amount in liquid form in the recipe.

This recipe is very quick and easy, so make sure to have all your ingredients ready. You can also use a day old rice to make it.

Ingredients
  

  • 2 tbsp. vegetable oil or coconut oil
  • 1 yellow onion medium (chopped)
  • 1 cup red bell pepper ,diced
  • 1 1/2 cup pineapple ,diced
  • 3 cloves garlic ,finely minced
  • 3 cups cooked rice (preferably a day old)
  • 1/2 cup green peas frozen (thawed)
  • 1 tsp lime
  • 2 tbsp. soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil optional
  • 1 tsp Maggi seasoning optional
  • 2 eggs large (beaten)
  • 1/2 cup scallions or green onions or chive thinly sliced

Instructions
 

  • Heat oil in a skillet or large non-stick pot over high heat.
  • Add garlic and onion, cook for 1 minute
  • Add red bell peppers and diced pineapple and cook until the pineapple is caramelized for about 3 minutes.
  • Stir in rice and peas, then add, soy sauce, oyster sauce and maggi seasoning if used. Cook for about 2-3 minutes.
  • Push the rice to one side of the skillet or pot, then add eggs pour lime juice over eggs. Stir thoroughly until almost cooked, then fold the eggs into the rice mixture to combine thoroughly. Pour sesame oil if using over rice and fold in thoroughly. Turn off heat
  • Garnish rice with green onions and serve warm.

Notes

  1. Make sure to have rice pre-cooked for this recipe. Usually one day old. 
  2. Make sure ingredients are cut up and within reach.
  3. If you choose to use jasmine rice in this recipe, here are the steps.
To 6 cups of water, add 3 tsp. salt into a cooking utensil and bring to a boil; then add 3 cups of jasmine rice. Cover with a tight-fitting lid, lower the heat, and simmer until cooked.

For this recipe, we will be using our favorite highly flavored green season. One of the main things to remember about this green seasoning is that it may take a little time to wash your green herbs, cut up and blend in a blender or food processor, but it saves time in the long term. This seasoning can be made in large amounts and stored in the refrigerator for at least a week. It can also be stored in containers and frozen to last longer. Once it is thawed out, you can then use it to season all your meat dishes. I usually keep mine for up to one month. How to make Pineapple BBQ Baked Chicken

Ingredients
  

  • 6-8 pieces chicken breast or thigh
  • ½ lime
  • 1/2 tsp hot sauce or pepper sauce
  • 1 tsp sea salt or to taste
  • 6-8 tbsp prepared green seasoning

Ingredients for Pineapple Sauce

  • 1/4 cup Barbecue sauce
  • 1 1/2 cup pineapple diced
  • 1/4 cup pineapple juice

Instructions
 

  • To make Pineapple Sauce for Baked Chicken Blend all the ingredients for pineapple sauce in a blender to make a thick, smooth sauce. Set aside to use later.
  • Place chicken in a large bowl, wash with water and drain thoroughly.
  • Squeeze lime all over the chicken; rub with your fingertips to make sure it is evenly coated front and back.
  • Sprinkle salt all over the chicken; rub with your fingertips to make sure it is evenly coated front and back.
  • Add blended seasoning to chicken; use your hands to rub the seasoning in all the pieces to make sure they are evenly coated front and back.
  • Leave to marinate for 15 mins
  • While chicken is marinating; pre-heat oven to 350°F
  • Add a thin layer of pineapple BBQ sauce to the bottom of your baking dish.
  • Once time is up for marinating chicken, place it in the baking dish
  • Evenly pour pineapple BBQ sauce all over the chicken.
  • Bake for 45-50 mins

Notes

Serve with macaroni pie, mac & cheese, rice, or vegetables.

Barbados is the place where my roots are. My maternal grandmother emigrated from Barbados to the island of Trinidad as a young woman. I enjoy visiting the Island. The people are very welcoming and treat tourists with a great sense of respect. They value their tourism industry immensely.


 

Things to do

There are so many things to do in Barbados that the time spent never seems to be enough. The beaches are amazing. You will feel pleasantly hypnotized while taking a stroll as your feet sink into the gorgeous white sand.

 

Barbados beaches are indeed breathtaking!


 

One of the Beaches we visited was Worthing Beach. Worthing Beach is located in the Parish of Christ Church on the south coast of the island. Its waters are calm and inviting. You may want to sit in that water for the entire day. It is a very children friendly beach.

Another famous beach on the south coast of the Island is Rockley Beach. Rockley Beach is also known as Accra Beach. It is situated in the Parish of Christ Church. It is a top-rated beach, offering both adventurous and mildly calm waves. You will enjoy walking along the soft pure white sand and swimming or participating in the many available water-sport activities.

We visited another beach on the east coast of the island called Bathsheba Beach. This Beach is situated in the parish of St. Joseph. The waves are incredibly rough, so they may not be conducive for bathing but it is perfect for surfing. However, it offers a picturesque view and is home to fishing and local restaurants.

One of the unique features of Barbados is Harrison’s Cave. In the 18th and 19th century attempts to access the cave proved futile. However, in 1974, Danish engineer and cave adventurer Ole Sorensen rediscovered it, along with Barbadians Tony Mason and Allison Thornhill. Later the government of Barbados developed the cave as a tourist attraction. You would indeed be educated on the history of this cave on your tour.

We visited a flower garden and was astonished to see unique flowers of all different varieties and types. It’s an amazing sight to behold of God’s wonderful creation!


 

Later we toured an old sugar factory and was given so many insights on making sugar. We also had fun taking pictures of some antique pieces of equipment on our tour.


Our stay in Barbados is always an adventure, and the time spent never seems to be enough. It is indeed one of the best vacation experiences we’ve had. I know that once you visit, you will have a fabulous stay.
