This is a healthy recipe for weight-watchers. But if you are indulging like I am, you can add the raisins and mixed fruits to get that tasty sweet flavor.  Without the fruits and raisin it may not be sweet. but it is still very tasty. I love colors, so I opted to add the mixed fruits and a cherry on top.  It is recommended that you use very ripe bananas for this recipe

Banana Oatmeal Bread is a healthy bread recipe. It makes a perfect breakfast bread or afternoon snack.

Equipment

  • One  9" x 5" loaf pan or Three 5.75" x 3" mini loaf pans. 

Ingredients
  

  • 2 1/4 cups Oatmeal
  • 1 cup flour
  • 3 ripe bananas
  • 1 cup whole milk
  • 2 tbsp butter melted
  • 2 eggs large
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp spice
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup raisins
  • 1/4 cup mixed fruits
  • Red cherry to garnish (optional)

Instructions
 

  • Preheat the oven to 350°F.
  • Generously grease baking pans with butter or baking spray. Set aside.
  • Sift the flour, baking soda, and baking powder in a large bowl. Add spice, nutmeg, and salt. Set aside.
  • Crush bananas with a fork, add eggs, whisk with an egg beater until thoroughly combined.
  • Add milk, melted butter, and vanilla extract to egg and banana mixture and whisk slowly for 1 minutes.
  • Add oatmeal to prepared wet ingredients and mix with a spatula until thoroughly combined.
  • Add dry ingredients little by little in three (3) parts and mixed while adding. Fold in thoroughly with a spatula until dry ingredients are combined. 
  • Fold in raisins and mixed fruits evenly into the mixture with a spatula.
  • Pour into prepared baking pan or pans and bake for 30 mins in mini pans and 45-50 mins in large loaf pans.
  • Remove from oven and allow to cool well, then serve.
