Heat oil in a large pan over high to medium heat.
Add onions, cook until slightly browned, add garlic.
Add ground beef and separate it with a wooden spoon or spatula. Cook for about 3-4 minutes, stirring intermittently. Drain off excess fat.
Add salt, Maggi seasoning, thyme, smoked paprika, ground cumin. Mix well to ensure the herbs are thoroughly combined.
Add tomato sauce, peas and carrots, and diced bell peppers, stir, allow it to simmer for 2-3 minutes, then turn off the heat.
Allow to cool for about 2-3 minutes. Spoon out on top of you potato, garnish and serve.
