Trinidad Pelau with Chicken and Pigeon Peas
Trini Pelau, is an iconic Trinidadian dish. It’s a must-have when pigeon peas are in season from December to February. It’s a one-pot dish made with chicken, fresh or canned pigeon peas, vegetables, herbs, and coconut milk. It is usually made on weekends and for family gatherings or what is commonly called a “lime” in Trinidad. This dish can be accompanied by fresh vegetables or coleslaw.
