The best thing about shrimp is that there are a variety of ways to cook it. One of the easiest dishes to make with shrimp is Shrimp Fried Rice. You get a completely delicious meal in 30 minutes or less. So if you’re short on time and have shrimp in your refrigerator, gather your ingredients, and let’s quickly put this mouth-watering dish on your dinner table.
How to make Shrimp Fried Rice?
Clean your shrimp by removing the head, tail, and shell. Wash thoroughly.
I love to add a little lemon juice to eliminate the fresh odor. Another ingredient that works well to eradicate freshness in meats and seafood is ginger. Ginger is a must-have in any kitchen. Not only does it add flavor, but it also eliminates fresh odor. So add your lemon juice, minced ginger, salt, black pepper, paprika, and mix. Sometimes I add a tablespoon or two of green seasoning. However, if you don’t have green seasoning, that is quite OK. Mix a little cornstarch into your shrimp for frying to get that lovely pink appearance to your shrimp.
Beat egg in a small bowl and add the other 1/2 teaspoon lemon juice. Set aside. Again you can add lemon juice to eradicate the freshness in the egg.
Using a large pan, heat one tablespoon canola and one tablespoon sesame oil. Cook shrimp until pink, then remove unto a plate. The sesame oil is used at this stage to add flavor to the shrimp. You will taste the difference in the flavor of the shrimp itself when you add sesame oil as oppose to adding only canola oil.
To cook your rice, add the other tablespoon of sesame oil to the pan, add green onions and saute for 1 minute, then add garlic and remaining ginger.
Now it time to add your peas and carrots, corn, and stir for about 1 minute. Add rice and mix, add soy sauce, Maggi seasoning, turmeric, 1/2 teaspoon salt, and stir to combine all the ingredients thoroughly.
Make a space in the middle of the pan by pushing the rice aside, add beaten egg and whisk until set. Add cooked shrimp and mix all ingredients and allow everything to cook thoroughly for about 2 minutes. Remove from heat.
Serve warm with your favorite vegetables. This Shrimp Fried Rice is so delicious and easy to make, it may just become your go-to dinner rice dish.
