Garlic Chicken in Sweet Chilli Sauce

This recipe is straightforward and very easy to make when you are looking for a quick dinner on a weeknight. The best thing about it is that you have the option of using fresh herbs. Fresh herbs in your meat dishes will give you a tasty and flavorful result. I linked my green seasoning recipe so you can make it if you wish. This green season can be made beforehand and stored in the refrigerator. I also practice seasoning my meats ahead of time to give them time to marinate overnight. You will not only get a tasty meat dish, but it will also be soft, tender, and juicy. If you are short on time, you can eliminate the green season if you don’t have any, and your dish will still be flavorful.

  • 2 lbs chicken thigh and/or drumsticks
  • 1/2 lime juice small
  • 5 cloves garlic minced
  • 1 teaspoon ginger minced
  • 1 teaspoon salt or to taste
  • 1 teaspoon maggi seasoning powder optional
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground paprika
  • 3 tablespoons fresh green seasoning optional
  • 1 cup chicken broth
  • 3 tablespoons Sweet Thai Chilli Sauce
  • 2 tablespoons olive oil only if you wish to sear chicken

  • Clean and wash chicken under running tap water, drain out water thoroughly and place in a large bowl.
  • Squeeze lime juice over all the chicken pieces, and mix to ensure evenly coated. You can leave it for 5 minutes and rinse with water if you wish. I usually leave the lime juice in my chicken and it eliminate the freshness and adds flavor.
  • Add salt, garlic, ginger, black pepper, paprika and maggi seasoning powder if using. Mix thoroughly to ensure all pieces are evenly coated.
  • If you are using green seasoning, you can add it at this point. Leave chicken to marinade for about 10-15 minutes.
  • Pre-heat oven to 400 ˚F, spray baking pan.
  • If you wish to get a nice burnt appearance to your chicken you can sear each piece in a skillet. Heat oil in skillet for about 2 minutes, add seasoned chicken, and cook for about 3 minutes on each side or until golden brown or slightly burnt. If you wish, you can skip this step.
  • Meanwhile, in a small bowl mix chicken broth and Sweet Thai Chilli Sauce. If you are using green seasoning in your chicken, your chicken will spring water while it marinade. You can use this water and add a little more to make one cup. Add your Sweet Thai Chilli Sauce and mix well. This would be you broth instead of purchased chicken broth.
  • Add each piece of meat to your prepared baking pan, pour chicken broth mixture all over and place chicken in the oven.
  • Bake for 30 minutes or until the chicken is fully cooked. Baking time may vary depending on the thickness or size of your chicken
  • When completely cooked, remove from oven. Garnish with lemon slices and fresh basil or a garnish of your choice.
